12 ounces linguine
3 Tablespoons olive oil
3 garlic cloves, minced
1 small to medium onion, diced
1/2 cup whole milk
1/2 cup heavy cream
4 ounces goat cheese, crumbled
1/2 cup grated parmesan cheese, plus more for sprinkling on top
1 (12 ounce) jar roasted red peppers, chopped
Salt and pepper to taste
If desired garnish with fresh basil leaves
1. In a large stockpot add a little salt to the water, bring water to a boil, then cook pasta according to directions on package, drain well
2. In a large saucepan heat olive oil on medium heat, cook onion and garlic, stirring frequently until onions become soft and translucent, about 3-4 minutes. ( careful not to burn garlic) then stir in milk, heavy cream, goat cheese, and 1/2 cup parmesan cheese. Cook until all of the cheeses become melted, about 2-3 minutes. Add the roasted red peppers, then puree sauce with an immersion blender, then toss in pasta gently.
3. Serve pasta, you can sprinkle with additional parmesan cheese, salt and pepper. Enjoy!!
