Chocolate Chip Cookie Cupcakes

These moist and delicious cupcakes are a picture perfect cupcake. I make cupcakes several times a week and these look and taste so good. It is like biting into a chocolate chip cookie..Put this one on your list for your next party. Enjoy!!



Ingredients For the Chocolate Cupcakes:

1 box devils food cake mix
3 eggs
1/2 cup of oil
1 cup of buttermilk
1/2 cup sour cream
1 1/2 teaspoons vanilla extract


Ingredients For the Frosting:

3 sticks butter, softened
Pinch of salt
1 Tablespoon Vanilla Extract
2 Pounds powdered sugar, sifted
4-6 Tablespoons heavy cream

Directions For The Cupcakes:

1. Preheat oven to 350 degrees. Line cupcake pan with 24 liners
2. Sift cake mix to remove any lumps
3. In a large bowl, combine eggs, oil, milk, sour cream and vanilla
4. Add the cake mix and blend until smooth about 1-2 minutes
5. Fill cupcake liners 3/4 full and bake for 17-22 minutes or until toothpick comes out clean





Directions For The Frosting:

1. In a large mixing bowl beat the butter until light and fluffy, then slowly add the powdered sugar and continue beating until well blended. Add the pinch of salt, vanilla and start with 3 tablespoons of heavy cream and beat until fluffy, then add the other 3 tablespoons of heavy cream until you reach desired consistency. After cupcakes are cooled completely pipe the frosting on.
2. You can either bake your own chocolate chip cookies or buy a soft and chewy brand. Then garnish frosting with mini chocolate chips.
