Cannoli Stuffed French Toast

Cannoli French Toast. Really, if I can put cannoli filling in anything I would it is so creamy and delicious. This is so simple yet elegant for a breakfast brunch. You will fall in love with this!!

Serves 4

2 cups whole milk ricotta cheese
1/2 cup powdered sugar
1 teaspoon vanilla extract
2/3 cup mini semi sweet chocolate chips
4 large eggs
1/2 cup heavy cream or milk
8 slices French bread
4 Tablespoons butter
Powdered sugar for dusting


1. In a medium bowl combine ricotta cheese, powdered sugar, and vanilla, mix well. Fold in chocolate chips and set aside.
2. In a pie plate whisk the eggs and the heavy cream together
3. Spread 4 slices of the bread with the ricotta mixture evenly, place the other slice of bread on top of the other slice, gently press them together, carefully dip both sides of the bread into the egg mixture until well coated.
4. In a large sauté pan melt the butter, add the sandwiches and cook on both sides until golden,for  about 4 minutes per side. Slice on the diagonal, dust with powdered sugar and serve on a plate immediately
