One Pot Mexican Skillet Pasta



This Mexican inspired pasta dish is great for a weeknight meal, ready in less than 30 minutes. This meal is loaded with fiber from the beans, and ever bite is packed with lots of flavor. You will love it!!!You can easily double this recipe to feed a larger family..





Ingredients:

1 tablespoon olive oil
1 pound of ground beef or turkey
1 (15 ounce) can of tomato sauce
2 cups of salsa, homemade or store bought
2 cups of cooked elbow pasta
1 Roma tomato, diced
1 cup corn kernels, canned, frozen or fresh
1 can of black beans, drained and rinsed
1/2 cup cheddar cheese, shredded
1 avocado, halved, pit removed, diced ( 1 lime, to squeeze over avocado to prevent browning)
2 Tablespoons Fresh cilantro leaves, chopped



Directions:

1. In a large skillet heat olive oil over medium-high heat, add the ground beef or turkey. Cook until browned about 5 minutes, crumble the meat as it is cooking. Drain fat, then add meat back into pan, add the tomato sauce, and salsa, then stir until combined. Add the pasta, tomato, corn, and black beans and stir until combined. Stir in cheese, and stir until melted about 2-3 minutes.
2. Serve immediately, top with avocado and cilantro. Enjoy!!!
