Key Lime Pound Cake

A moist and delicious pound cake with the perfect amount of Key Lime Juice. The glaze is the best part drizzled over the top with the lime juice added, makes this cake so refreshing. Great for St. Patricks Day party, Birthdays, Dinners, or for me I always have a dessert every night after we eat.


1 cup butter softened
1/2 cup shortening
3 cups sugar
6 eggs
3 cups self rising flour
1 cup milk
1 tsp vanilla
1 tsp lime zest
1/4 cup Key Lime Juice ( Nellie And Joes Famous Lime Juice)

Directions For The Pound Cake:

In a mixing bowl beat and cream butter, shortening and sugar together until fluffy. Add eggs beat until combined.  Mix in flour and milk  alternating starting with the flour then the milk, ending with milk and blend well. Add in vanilla, lime zest and lime juice and beat just until combined. Pour into a greased and floured bundt pan. Bake at 325 degrees for 1 hour and 15 minutes. Check after 1 hour and 5 minutes. Cake is done when tothpick comes of clean and cake springs back when touched.

Ingedients For The Glaze:

1 cup confectioners sugar
3 tbsp. Key Lime juice ( Nellie And Joes Famous Key Lime Juice)
1/2 tsp vanilla


In a medium bowl, combine and whisk all ingredients together mix until smooth. Drizzle glaze over cooled cake
