These guacamole deviled eggs are so delicious with a combination of avocado, red onion, tomato, cilantro and few other spices. Perfect deviled egg for me, I am making these for Easter this year. You will love these, give them a try!!!!
6 hard boiled eggs, peeled and cut lengthwise
1 ripe avocado, pitted and peeled
1 tbsp fresh lime juice
1/4 tsp salt
1 tomato, remove seeds, and diced
1 Tablespoon red onion, diced
1 Tablespoon jalapeño, diced
1 Tablespoon cilantro
Dash of paprika or chili powder for garnish
Optional: You can cook a few slices of bacon and sprinkle on top
Cut avocado in half, remove pit. Mash the avocado with a fork along with the egg yolks.
In a large bowl add the avocado, lime juice, salt, diced tomato, red onion, jalapeño, and cilantro. Mix together until creamy and smooth. ( you can leave the mixture a little chunky if you desire)
Spoon the mixture into the halved eggs. Sprinkle with a dash of paprika or chili powder.
Serve immediately or store in an airtight container for up to 2 days.
