These moist cupcakes have mini chips in the batter, topped with a delicious chocolate chip cookies dough frosting. Perfect cupcake that everyone will enjoy!! Easy to make and the best part about ya these is trying the frosting, just like when we were kids and wanting to eat the raw cookie dough, just more fluffier because it is a frosting. Enjoy!!!!
Ingredients:
Chocolate Cake:
1 box Devil's Food Cake mix
3 eggs
1/2 C. melted butter, slightly cooled
1 C. milk
1/2 C. sour cream or plain yogurt
2 tsp. vanilla extract
1 C. mini chocolate chips
Cookie Dough Frosting:
1 1/2 C. butter, softened
2 tsp. vanilla extract
1/3 C. flour
1/4 C. brown sugar
1 pinch salt (more if u desire)
2 Tbsp. milk
4-5 C. powdered sugar
Mini Chocolate Chips for decoration
Directions:
1. Preheat oven to 350 degrees and line pan with cupcake liners.
2. Sift cake mix into a small bowl and set aside.
3. In a large bowl, combine eggs, melted butter, milk, sour cream and vanilla extract until smooth.
4. Stir in cake mix and chocolate chips.
5. Fill cupcake liners 3/4 full and bake for 14-16 minutes or until an inserted knife comes out clean.
6. Let cool.
7. Cookie Dough Frosting: Beat butter for 2 minutes. Add vanilla extract, flour, brown sugar and salt and beat again for 1 minutes. Slowly add in milk and powdered sugar until you reach your desired consistency. You have to beat for several minutes. You want it to taste like a cross between cookie dough and frosting, so the flour and other ingredients make it like cookie dough while the powdered sugar helps keep it a frosting. You can taste and see if you like a add more of something
8. Pipe onto cooled cupcakes and top with mini chocolate chips!
