Cherry Chocolate Chip Brownies





These delicious and moist brownies have a creamy cherry buttercream filling topped with a white chocolate ganache. Looks as good as it tastes. This is a winner in my recipe book..Enjoy!!!!


Ingredients For The Brownie:

1 stick unsalted butter, softened
8 ounces semi sweet chocolate chips
1 1/4 cup granulated sugar
3 large eggs
1 teaspoon vanilla extract
3/4 cup all purpose flour
pinch of salt

Cherry Buttercream Filling:

1 cup ( 2 sticks) unsalted butter
3 1/2 cups powdered sugar
1/2 cup dark chocolate chips
6 ounces maraschino cherries, chopped ( no stems)
5 Tablespoon maraschino juice from jar of the cherries


White Chocolate Ganache:

10 1/2 ounces white chocolate chips
3/4 heavy whipping cream



Instructions:

1. Preheat oven to 350 degrees and spray a 9x9 inch square pan with cooking spray and set aside
2. Melt butter and semi sweet chocolate chips in a saucepan over medium heat , whisking constantly until smooth. Set aside for 10 minutes until it reaches room temperature
3. Stir sugar into the cooled butter/chocolate mixture and whisk until combined, add in the eggs, one at a time whisking after each egg until completely combined , whisk in the vanilla, and stir in the flour and salt, mix until just combined. Pour into the prepared pan and bake for 30 minutes or until toothpick comes out clean. Remove from oven and set aside.
4. For The Cherry Buttercream Filling:  In a large mixing bowl using a mixer combine the butter and the juice from the maraschino cherry jar , beat until the butter mixture is smooth, slowly add the powdered sugar, and beat until smooth and well combined. Fold in the dark chocolate chips and the chopped cherries. Spread over the completely cooled brownies.
5. For The White Chocolate Ganache: In a large microwave proof bowl combine the white chocolate chips  and heavy whipping cream and microwave for 30 seconds, stir, then microwave for an additional 30 seconds, spread evenly over the cherry filling and place in the refrigerator for at least 2 hours or until bars are hardened. When cooled cut into bars and Enjoy!!!
