Crockpot Chicken Taco Chili


This recipe is an easy and delicious one pot meal. It has lots of fiber from the beans, warm spices, and
a delicious broth. Add some great toppings and your meal is complete.


Ingredients:

1 ( 16 ounce) can kidney beans, drained
1 ( 16 ounce) can black beans, drained
1 ( 16 ounce) can white beans, drained
2 garlic cloves, minced
1 medium onion, chopped
1 jalapeƱo pepper, minced
1 green or red pepper, chopped
1 ( 10 ounce) bag frozen corn
1 ( 8 ounce) can tomato sauce
1 ( 28 ounce) can diced tomatoes
1 tablespoon cumin
1 tablespoon chili powder
1 teaspoon dried oregano
1 teaspoon kosher salt
1/2 teaspoon black pepper
2 boneless, skinless, chicken breasts, uncooked
1/4 cup fresh cilantro
Toppings: additional cilantro, sour cream, red onion, shredded cheese, scallions, etc..


Directions:

1. Combine the first 15 ingredients into a slow cooker, stir, place uncooked chicken on top and cover and cook for 6 hours on low or 4 hours on high. Stirring occasionally.
2. 30 minutes before serving take chicken breasts out and pull apart with 2 forks, put back into the slow cooker and finish cooking the last 30 minutes.
3. Serve in a bowl with your desired toppings and Enjoy!!
