Cheeseburger Soup

This delicious soup has the taste all of the flavors of a cheeseburger but in a creamy comforting soup. This addition of hamburger rolls as croutons and topped with bacon. So amazing. Try this, you will love it!!!!


Ingredients:



3 hamburger buns, diced into 1 inch cubes
4 slices bacon, diced
1 Tablespoon olive oil
8 ounces ground beef
1/4 cup butter
2 garlic cloves, minced
1 onion, diced
2 stalks celery, diced
2 carrots, diced
1 Tablespoon Worcestershire sauce
3 Tablespoons all purpose flour
2 1/2 cups chicken broth
2 cups milk, or more as needed
2 russet potatoes, peeled and cubed
1 1/2 cups cheddar, shredded
Salt and pepper
2 Tablespoons fresh chives



Directions:

1. Preheat oven to 400 degrees, place cubed hamburger buns on a cookie sheet in a single layer and bake until crisp and golden about 10-15 minutes, and set aside.
2. In a large skillet over medium-high heat cook bacon about 6-8 minutes until crispy, place on paper towel lined plate and set aside
3. Heat olive oil in a saucepan over medium-high heat, add ground beef and cook about 5 minutes until no longer pink, and gets browned, drain excess fat and set aside
4. In a large stockpot add butter and melt over medium heat, add garlic, onion, celery, carrots, and Worcestershire sauce, cook stirring frequently until onions are soft and translucent, about 3-4 minutes, then whisk in the flour, and cook about 1 minute, gradually add the chicken broth, and the milk and cook for a few minutes until thickened, whisking constantly about 2 minutes, then stir in the potatoes. Bring to a boil, then reduce heat to a simmer, until potatoes are tender about 12-15 minutes, stir in the ground beef, cheese, salt and pepper to taste. If the soup is to thick gradually add in more milk, until desired consistency is reached.
5. Serve immediately and garnish with croutons, bacon, (and chives if desired)
