Lemon Chicken Pasta


This pasta dish is a light and healthy meal, I love the combination of lemon and basil. This dish your entire family will love. It has a nice refreshing light flavor that you will enjoy!!!!



Ingredients:

4 chicken breasts, seasoned with salt and pepper
1 pound penne pasta
1/2 stick butter
2 cloves garlic, minced
2 whole lemons, juiced
3/4 cup heavy cream
1/4 cup half and half
3/4 cup parmesan cheese
salt and pepper to taste
1/2 cup fresh basil leaves, chopped


Directions:

1. Using a grill or grill pan , preheat and lightly grease grates. Place chicken breasts on grill, cook fr about 4 minutes on each side, or until no longer pink. Then set aside
2. In a large stockpot cook pasta according to directions on box.( reserve 1 cup pasta water)
3. After draining pasta set the pasta aside in big serving bowl, drizzle with a little olive oil
4. Using the same stockpot place in the butter and melt. Add the garlic and just cook until fragrant for about 1-2 minutes. Add the juice from the lemons and whisk, pour the heavy cream and the half and half  and whisk until combined. Add the parmesan cheese and whisk until melted, add salt and pepper to taste. Place half of the basil in the sauce and stir. Pour the pasta back into the stockpot and stir until the pasta is coated with the sauce. Place on a large serving bowl, slice the chicken on a diagonal, and place over the pasta. Sprinkle the rest of the basil and a little more parmesan over the top and serve.
