Pepperoni Caprese Bites With a Basil Vinaigrette

This has to be one of our favorite appetizers. I love every single ingredient in these, plus the basil vinaigrette is out of this world. Perfect for last minute company, or make a whole bunch for a big crowd. Super Easy And Delicious!!!

Serves 24

24 mini mozzarella balls
24 basil leaves
24 grape or cherry tomatoes
24 slices of pepperoni from deli
24 plastic toothpicks or mini bamboo skewers

Ingredients For The Basil Vinaigrette:

1/3 cup olive oil
1 Tablespoon White Balsamic Vinegar
1/4 teaspoon garlic powder
1 scallion, very finely minced
6 basil leaves, chopped fine
salt and pepper

Directions For the Skewers:

Thread the mozzarella ball on first, then fold pepperoni slice in half then half again and thread on toothpick, next the basil leave, then the tomato. Set on a platter.

Directions For The Basil Vinaigrette:

Place all of the ingredients into a mason jar, shake a few times, then let sit for 30 minutes for the flavors to develop

When ready to serve drizzle vinaigrette over skewers and serve.
