Key Lime Pie

This refreshing, scrumptious, Key Lime Pie is going to be the best recipe you will ever find. It is so delicious, I make this all of the time. Easy recipe to make. Enjoy!!!!!


Ingredients For Crust:

1 1/2 cups graham cracker crumbs
2 Tablespoons sugar
3 Tablespoons melted butter


Filling:

4 egg yolks
1 can (14 ounce) sweetened condensed milk
1/2 cup key lime juice
1/2 teaspoon lime zest

Topping:

1 cup heavy cream, chilled
2 Tablespoons powdered sugar




Directions For The Crust:

1. Preheat oven to 350 degrees
2. Break up graham crackers and place them in a food processor, pulse until becomes smooth crumbs, or you can buy them already crushed. Add the melted butter, sugar and salt then pulse until combined. Press into a 9 inch round pie plate, evenly around the sides and bottom. Bake the crust for 10 minutes and take out of oven and let cool completely.

Directions For The Filling:

1. In a large mixing bowl combine using a whisk attachment add the egg yolks and lime zest and on high, beat until combined. Gradually add the sweetened condensed milk and continue to beat about 2 minutes, lower speed to low and gradually add in the lime juice. Mix until incorporated. Pour the mixture into the crust and bake 15 minutes on the middle rack, or until the filling is just set. Cool on a wire rack, then transfer to the refrigerator.

Directions For The Whipped Topping:

1. Using a mixer on high speed add the heavy cream, beat for 1 minutes then add the powdered sugar. Beat until soft stiff peaks form. Evenly spread the whipped cream on the pie and if desired pipe some around the edges with a pastry bag and star tip. ( you do not need to decorate around the edges, just to make it fancy it is not going to change how it tastes) Then if desired zest a little bit of a lime and place around the edges. Place in the refrigerator for at least 3 hours.
