These cookies are so soft in the center yet crisp on the outside, and so good. Making a yummy S'mores cookie by adding peanut butter makes these even better. These are so easy to make, perfect for a quick dessert or quick snack. If you know me by now, I love S'mores everything and this recipe will be a hit with your family and friends. Enjoy!!
Ingredients:
½ c. shortening
¾ c. creamy peanut butter
⅓ c. granulated sugar
⅓ c. light brown sugar
1 egg
2 tbs. milk
1 tsp. vanilla
1 c. all purpose flour
½ c. graham cracker crumbs
1 tsp. baking soda
½ tsp. salt
1 c. mini marshmallows
4 – 1.55 oz. Hershey bars, broken into chunks

⅓ c. light brown sugar
1 egg
2 tbs. milk
1 tsp. vanilla
1 c. all purpose flour
½ c. graham cracker crumbs
1 tsp. baking soda
½ tsp. salt
1 c. mini marshmallows
4 – 1.55 oz. Hershey bars, broken into chunks
Directions:
1.Preheat oven to 375 degrees F.
2.In a large mixing bowl, beat shortening, peanut butter, granulated sugar and brown sugar until light and fluffy, about 2-3 minutes, then add egg, milk, and vanilla; beat well. Mix in flour, graham cracker crumbs, baking soda, and salt until well combined, but do not over mix.
3.Shape dough into 1” balls. Place on un greased cookies sheets. Flatten slightly the bottom of a glass.
4.Bake 6 minutes or until slightly set. Remove from the oven and add a few mini marshmallows and three small chunks of Hershey Bar to each cookie. Return to the oven 3-4 more minutes until lightly browned.
5.Cool 1-2 minutes and then remove to wire racks and cool completely before into container.
