Granola. So many things you can do with it. Just eat it for a snack like I do, mix it in your yogurt, or make some parfaits. This recipe is so easy with only 4 ingredients that you have at home in your pantry. If you desire you can add 1/2 teaspoon cinnamon, but you do not need it. I think it is perfect without it.
Ingredients:
- 2 cups old fashioned oats
- 1/4 cup creamy peanut butter
- 1/4 cup honey
- 2 Tbsp packed light-brown sugar
Directions:
- 1.Preheat oven to 325 degrees. Pour oats into a mixing bowl, set aside. In a microwave safe mixing bowl melt peanut butter, honey and brown sugar and heat mixture in microwave until runny and smooth, about 25 seconds. Or this can be done in a saucepan. Then pour mixture over oats in mixing bowl and toss mixture with a spatula until evenly coated.
- 2.Spread mixture onto a parchment paper lined baking sheet into an even layer and bake in preheated oven until golden brown, about 18 - 20 minutes, stirring once halfway through baking. Allow to cool completely, it will not become crunchy until it is cooled. Then store in an airtight container.
