Lemon Curd

Some of my recipes call for lemon curd, it is pricey and sometimes hard to find, this recipe is perfect, only 3 ingredients and simple to make. Here is a recipe for the easiest and best curd you will ever have.


3 whole eggs
1/3 cup fresh lemon juice ( not bottled)
1/2 cup granulated sugar


1. In a glass bowl mix the eggs, lemon juice, and sugar cook using a double boiler, ( a saucepan underneath the glass bowl, the saucepan needs to be smaller than the glass bowl) then whisk constantly until the mixture becomes thick and creamy. Using a spatula transfer mixture to another bowl and set aside to cool, then place in the refrigerator , for at least 1-2 hours. Then keep stored in the refrigerator.
