Blackberry Pineapple Mint Cocktail

A refreshing blend of muddled blackberries,  rum and pineapple juice and touch of mint. Perfect spring and summer cocktail while sitting poolside entertaining guests, or just to have while hanging out.

Yield: 2 cocktails
  • 10 blackberries
  • 3 leaves fresh mint
  • 1 ounce freshly squeeze lime juice
  • 4 ounces clear rum
  • 6 ounces pineapple juice
  • club soda
  1. Muddle the blackberry, mint and lime juice in the bottom of a cocktail shaker.
  2. Add the rum and pineapple juice, along with a few pieces of ice, and secure the lid onto the shaker. Shake for 30 seconds until the liquid is chilled.
  3. Pour the cocktail into 2 ice-filled cocktail glasses and top with a spritz of club soda. Serve immediately.
