These little bite size antipasti bites, are pure heaven..what a great idea instead of making a platter to use these little cups, they look and taste amazing. Give them a try, you won't be disappointed.
24 slices of genoa or hard salami
1 cup drained marinated artichoke hearts, chopped finely
1/2 cup roasted red peppers, finely chopped
4-5 ounces fresh mozzarella, cut into cubes
2 ounces provolone, cut into cubes ( this ingredient optional)
1/4 cup finely chopped basil green or purple (or both)
1. Preheat oven to 400 degrees
2. Place one slice of salami into a muffin cup and bake for 8-10 minutes or until salami becomes a little crisp
3. Transfer cups to a serving platter and cool
4. Meanwhile in a medium bowl combine the artichoke hearts, red peppers,mozzarella, provolone, and basil. Stir until combined then using a spoon evenly fill the cups with the filling and serve..Enjoy!!
