Tropical Coconut Lime Bundt Cake With Glaze







This is a moist, perfect refreshing cake that is packed with flavor from coconut and lime, then a delicious thick glaze with shredded coconut and lime zest. This cake will bring you to the tropics, so simple to make and you will love it..Enjoy!!!!





For The Coconut Lime Cake:

1 box white cake mix ( use the egg white recipe ingredients called for on the box)
1 cup shredded coconut
1 ( 3.4 box lime jello)

For The Coconut Glaze:

2 cups powdered sugar
2 1/2 Tablespoons milk or heavy cream
2 Tablespoons lime zest
1 cup shredded coconut


Directions:

1. Preheat oven to 350 degrees. Spray bundt or tube pan with cooking spray and set aside
2. In a large mixing bowl combine cake mix, the egg whites, oil and water called for on the box. Beat at medium speed for about 1-2 minutes until all combined.
3. Take 2 medium bowls and split up the batter evenly among the bowls. In 1 bowl whisk in the lime jello, in the second bowl whisk in the coconut.
4. Pour the coconut batter into the bundt pan and spread evenly, then pour the lime cake batter over the coconut batter and make sure it evenly covers the batter, I use a spoon to spread the batter.
5. Bake in the oven for (what box calls for ) I baked mine for about 40 minutes or until toothpick comes out clean.
6. Remove from oven let cool in pan for 15 minutes then place on a wire rack until completely cooled

For The Glaze:

1. In a medium bowl place the powdered sugar and the milk and whisk until you reach a thick but pourable consistency. You may have to add a little more milk or powdered sugar until you reach desired consistency. Sprinkle coconut over the top, then the lemon zest. Let set. Store in a airtight container, Enjoy!!
