Perfect Vanilla Cupcakes




These delicious cupcakes have a moist cupcakes and amazing frosting. If you are looking for a perfect vanilla cupcake, here it is. I decorated these for my nieces birthday party at school, but you can decorate for any occasion. Enjoy!!!





Ingredients For The Vanilla Cake:

1 Box white cake mix
1/3 cup oil
4 egg whites
3/4 cup buttermilk
3/4 cup sour cream
2 teaspoons vanilla extract


Ingredients For The Frosting:

2 sticks softened butter
2 teaspoons vanilla extract
4-5 Tablespoons heavy cream
4-4 1/2 cups powdered sugar



Directions For The Cupcakes:


1. Preheat oven to 350 degrees and line pan with cupcake liners.
2. In a large mixing bowl, add the oil, egg whites, buttermilk, sour cream and vanilla extract and beat until combined.
3. Sift cake mix in a bowl then add the rest of ingredients and beat for 1 minute until combined.

4. Fill cupcake liners 3/4 full and bake for 15-21 minutes, or until and inserted toothpick comes out clean.


Directions For The Frosting:

1. In a large mixing bowl using paddle attachment or hand mixer beat the butter for 2 minutes until nice and fluffy, add the vanilla, beat for 1 minute, add the powdered sugar and heavy cream, starting with 4 cups powdered sugar, beat for 3-4 minutes until you have reached a thick frosting. I used about about 4 1/2 cups powdered sugar. You can work with the frosting, I like mine on the thicker side, that is why I used about 4 1/2 cups, but the preference is yours.
