Cinnamon Swirled Banana Bread With Cinnamon Sugar Glaze





Just imagine a cross between a super moist banana bread and a cinnamon bun, And there you have it, this delicious banana bread with a yummy cinnamon/swirl mixture swirled into the batter than a heavenly powdered sugar and cream glaze then to top it off a little more sprinkle of goodness right over the top. This will leave your house smelling like amazing bananas and cinnamon, what can be better..So easy to make, sweet perfection..Another great recipe I found, and I am so glad because anything with bananas makes me happy!!!!










Ingredients For The Banana Bread:

  • 2 cups all purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup light brown sugar, doesn't have to be packed
  • 4 Tablespoons butter, softened to room temperature
  • 2 large eggs
  • 3 Bananas (1 and 1/2 cups mashed very ripe banana)
  • 1/3 cup Greek plain or vanilla yogurt 
  • 1 teaspoon vanilla extract

For The Cinnamon/Sugar Mixture:

  • 1/4 cup  granulated sugar
  • 1 teaspoon ground cinnamon
  • Note: Reserve 1 Tablespoon cinnamon/sugar mixture to drizzle over glaze 

For The Glaze:

  • 1/2 cup  powdered sugar, sifted
  • 1 Tablespoon heavy cream, heavy cream or milk

Directions:


  1. Preheat oven to 350F. Spray a 9×5-inch loaf pan with cooking spray. Set aside.
  2. In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside. In a separate large bowl, beat the brown sugar and butter with a mixer on medium speed until well blended – about 1-2 minutes. Add the eggs one at a time, beating well after each addition. With a spatula or large wooden spoon, stir in the mashed banana, yogurt, and vanilla. Slowly add in the dry ingredients. Batter will be thick, and do not over mix, that will make a crumbly and tough bread 
  3. Spoon half of the batter into prepared loaf pan. Sprinkle with cinnamon-sugar swirl ingredients. Reserving 1 Tablespoon for topping), then top with remaining batter. Bake for 40-45 minutes or until a wooden pick inserted in center comes out clean. Cool 15 minutes in the pan on a wire rack. Remove from pan and cool completely on the wire rack.
  4. For The Glaze: While the bread is cooling, make the glaze in a small bowl by combining the powdered sugar and heavy cream. Add more powdered sugar until you reached desired thickness. Drizzle over banana bread then sprinkle the 1 Tablespoon cinnamon/sugar mixture over glaze aqnd let set. Store in airtight container
