Shrimp Scampi Dip





This creamy shrimp scampi dip is one word "Amazing" a cheesy blend of shrimp,garlic, white wine, cream cheese, and a blend of cheeses. Talk about with every bite cheesy goodness. This delicious dip will soon be your favorite like it became mine. When I found this recipe, I thought how genius. It is that incredible. Grab your favorite baguette and toast or grill it and dip away!!!



Ingredients:
  • 3 tablespoons butter
  • 8 ounces medium shrimp, peeled, deveined and roughly chopped
  • 4 cloves garlic, minced
  • 1/4-1/2 teaspoon red pepper flakes, to taste
  • 1/4 cup white wine
  • 2 tablespoons freshly squeezed lemon juice
  • salt and black pepper, to taste
  • 4 ounces cream cheese, softened
  • 1/4 cup sour cream
  • 3 tablespoons mayonnaise
  • 2 tablespoons chopped fresh parsley leaves
  • 1/2 cup shredded mozzarella cheese, divided
  • 2 tablespoons grated Parmesan
Directions:
  • 1. Preheat oven to 350 degrees F. Lightly coat a 9-inch baking dish with nonstick spray and set aside
  • 2. In a large skillet, melt butter over medium high heat. Add shrimp, garlic and red pepper flakes. Sauté stirring occasionally, until turn pink about 2-3 minutes. Whisk in wine and lemon juice then season with salt and pepper, to taste.
  • 3. Bring to a simmer then remove from heat and stir in cream cheese, sour cream, mayonnaise, parsley, 1/4 cup mozzarella and Parmesan.
  • 4. Spread mixture into the prepared baking dish and  sprinkle with remaining 1/4 cup mozzarella. 
  • 5. Place into oven and bake until bubbly and golden, about 10-14 minutes.
