Belgian Waffles










These Belgian Waffles are the best ever. They are fluffy, soft, yet crisp. The perfect waffle. They are served with fresh whipped cream and fresh berries, also these can be made dipped in a cinnamon/sugar mixture to make churro waffles, and just with simply loads of butter and syrup and powdered sugar,  both ways are listed below on how to make them.

These will become a family favorite of yours and that is a promise, it is the buttermilk that makes them so good. Ever since I have been baking buttermilk is a blessing to so many desserts and recipes, I have realized, buttermilk just makes everything better when baking. I made these 2 days ago for dinner, I make these on the weekend, I can eat these any time or day of the week. I found this recipe and fell in love, they are that good. My husband is a meat and potato eater but when he asks me to make waffles for dinner several times, I was floored. That means they are good.






Ingredients:

  • 1 1/2 cups  all-purpose flour
  • 1/2 cup  cornstarch
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups buttermilk
  • 1/2 cup milk
  • 6 Tablespoons vegetable oil 
  • 1/2 teaspoon vanilla extract
  • 2 large eggs, whites and yolks separated
  • 3 Tablespoons granulated sugar
Directions:
  • 1. Preheat oven to 200 degrees. Preheat a belgian waffle or regular waffle maker. In a large mixing bowl whisk together flour, cornstarch, baking powder, baking soda and salt for 20 seconds, make a well in center of mixture and set aside.
  • 2. In a separate large mixing bowl whisk together buttermilk, milk, vegetable oil, vanilla extract and egg yolks until combined. 
  • 3. In a large separate bowl, using an electric hand mixer set on high speed, whip egg whites ( no yolk) until soft peaks form. Add sugar and whip until stiff glossy peaks form.
  • 4. While whisking, pour buttermilk mixture into well in flour mixture and mix just until combined and batter will be slightly lumpy, that is okay. Then fold in egg white mixture. Cook batter in waffle until it beeps, my machine beeps when it is ready to flip. Or you machine has manufacturers directions on how long to cook your waffles.Once each waffle is done, transfer to warm oven and allow to rest until crisp. Serve warm with butter and maple syrup.
  • To Serve: serve with sweetened whipped cream, fresh berries and raspberry/blueberry or strawberry syrup. For churro waffles brush top of waffle with melted butter make sure each square has butter in it  then pour a generous amount of cinnamon sugar into a 9-inch pie dish and dunk butter coated side in cinnamon sugar mixture.
