Almond Joy Coconut Brownie Bites













These amazing Almond Joy Coconut Brownie Bites start out with a moist and chewy brownie, then topped with a delicious coconut, cream cheese, butter, vanilla frosting, which is to die for, then topped off with drizzled chocolate and an almond. These are perfect for at home treat, parties, holidays, anytime or day of the year. Everyone will want one of these first and they will be gone before you know it..They are amazing, do I need to say it again, yes this is one of my favorite recipes I have found. They are so beautiful looking, just like a bakery but even better. I do not even step foot in bakeries. Their is no comparison baking from scratch is so much better and tastes better than a bakery.



Ingredients:


  • 1 (15.25 oz) brownie mix
  • 1/4 cup water
  • 1/3 cup vegetable oil
  • 1 egg
  • For The Frosting:
  • 4 oz. (1/2 brick)  Cream Cheese, softened 
  • 1/2 stick (4 Tablespoons)  butter, softened 
  • 1/2 teaspoon vanilla
  • 1 1/2-2 cups powdered sugar
  • 2 1/2 cups Baker's Coconut
  • Almonds (about 24 almonds)
  • 1 (4 oz.) bar, Baker's Semi-Sweet Chocolate


Directions:
  1. Preheat oven to 350 degrees. Line a 24-cup mini-muffin tin with mini- cupcake liners. Set aside.
  2. In a large bowl mix batter by combining brownie mix, water, oil and egg and whisk until combined. Mix until all ingredients are combine and batter is smooth. Scoop the batter into the muffin cups. Cups will be about ¾ full. Bake for 18-21 minutes. Remove from oven and let brownies cool completely.
  3. For the frosting, combine cream cheese and butter in a large bowl. Using a stand or hand mixer, cream the butter and cream cheese until combined, about 2-3 minutes then add the vanilla and mix until combined. Gradually add the sugar until completely incorporated, scrape down the sides of the bowl. Gradually add the coconut, and mix until combined.
  4. Scoop about a very heaping tablespoon of frosting on to each of the brownies. Top each with an almond. Melt the chocolate in the microwave according to package directions. Add the melted chocolate to a zip-lock bag, and cut the tip of the bag. Squeeze out the chocolate and drizzle the brownie bites with the chocolate. Let cool before serving. Refrigerate any leftovers.
