Chicken Piccata

I love Chicken Piccata. It is a family meal that we all have at least 1 day a week. I serve this over egg noodles. It is perfect to make for a large party because it is quick and easy to make.

4 skinless and boneless chicken breasts, butterflied and then cut in half
Salt and freshly ground black pepper
All Purpose Flour ( For Dredging)
6 tablespoons Butter
7 Tablespoons Olive Oil
1/3 cup fresh lemon juice
1 cup chicken stock
1/2 cup brined capers, rinsed

Directions:

Season chicken with salt and pepper. Dredge chicken in flour and shake off excess.

In a large skillet over medium high heat, melt the butter with the olive oil. When butter and oil start to sizzle, add the chicken ( it may need to be done in batches) and cook for 3 minutes. When chicken is browned, flip and cook other side for 3 minutes. Remove the chicken and transfer to a plate.

Into the pan add the lemon juice, stock and capers and scrap up brown bits from the pan for extra flavor. Return all the chicken to the pan and
simmer for 5 minutes. Remove chicken to platter. Add 2 tablespoons butter to sauce and whisk until well combined. Then pour all of the sauce over the chicken. You can garnish with parsley.

Freezer Breakfast Sandwiches

I always find myself going to the food stores and buying the 4 or 8 pack of the frozen breakfast sandwiches for between 5-8 dollars, and who knows what ingredients they put in there. These sandwiches you can make for pennies a piece. These are great for the kids before school, for a snack during the day, or just to grab and go. Football season is here and all you Mom and Dad's know you either have to make a quick meal that everyone at all different times are eating. Why not make these, throw them in the freezer, and the kids can grab one before they go to play sports. This is a brilliant idea. This makes 12 sandwiches, you can cut the recipe in half if you don't need that many, but I figure make a bunch while your getting everything anyway!!

Ingredients:

12 english muffins
12 slices of yellow american cheese, or sharp sliced cheddar
36 slices of deli ham (sliced thin)
12 large eggs
salt and pepper to taste
plastic wrap

Instructions:

1. Preheat oven to 350 degrees and spray jumbo muffin tins or ramekins with nonstick cooking spray
2. Crack 1 egg into each muffin tin or ramekin, using a sharp knife or toothpick pick gently pierce each yolk and sprinkle with salt and pepper and bake in the oven for 10-15 minutes. Then let cool and with a knife slide them out of the tins or ramekins gently.
3. Meanwhile slice english muffins.
4. Start by placing one slice of cheese on the bottom of the english muffin, then 3 slices of ham, and finally the cooked egg. Place the top of the english muffin on top and wrap tightly in plastic wrap.
5. TO REHEAT: Remove the sandwich from the plastic wrap and wrap in a paper towel. Microwave for 1 minute on 50% power. Flip sandwich over and microwave on full power for another minute. You may need an additional 10-20 seconds, depending on your microwave. Enjoy!!!!

3. Then cut the butter into small cubes ( it is very important that the butter is cold) then add butter to the flour mixture, and with two knives or a pastry cutter, cut the butter into the four mixture, this should take up to 5 minutes to reach the desired consistency . The mixture in the end should resemble coarse crumbs. Set aside.
4. In another medium bowl combine the pumpkin puree, molasses, half and half, egg, and vanilla and whisk until thoroughly combined.
5. Add the pumpkin mixture into the flour mixture and stir with a spatula until soft dough forms.
6. Transfer the dough onto a floured surface and knead until it just comes together
7. Then using a rolling pin roll the dough into a 10x7 rectangle then using a floured pizza cutter cut the dough in half lengthwise, then cut into 4 even pieces crosswise, making 8 rectangles, ow cut each rectangle into 2 triangles
8. Now take the triangles and place them onto the prepared baking sheet and bake for 10-15 minutes until golden brown and toothpick inserted into the center comes out clean. Transfer onto a cooling rack until completely cooled.
9. Once the scones are cooled make the glazes
10. For the sugar glaze, in a medium bowl add the sifted powdered sugar and 1 Tablespoon of half and half, if you place a spoon in the glaze and it slowly drizzles off that is fine, if not add a little more half and half. ( If the thin after that just add a little more powdered sugar)
11. Dip the top of the scone into the glaze and place on cooling rack until set.
12. For the spiced glaze: In a medium bowl add the sifted powdered sugar, pumpkin puree, spices, and 1 Tablespoon half and half. Again do the same as the sugar glaze to check for consistency. Now using a spoon using a zig zag pattern, drizzle on the scones, and Enjoy!!!!

Freeze your Herbs in Olive Oil

This is such a great idea. It this time of year is still have some herbs that are in my garden, don't just let them die out. You only need a few items to do this. You can also mix your herbs say like rosemary and thyme, or basil and oregano. Preserving herbs in oil reduces some of the browning and freezer burn that herbs can get in the freezer.

8 Steps for Freezing Herbs in Oil

  1. Choose firm, fresh herbs, ideally from the market or your own garden.
  2. If you wish, you can chop them fine. Or leave them in larger sprigs and leaves. Here I froze a combination of finely-chopped and whole herbs such as rosemary, fennel stalk, sage, and oregano.
  3. Pack the wells of ice cube trays about 2/3 full of herbs.
  4. You can mix up the herbs, too; think about freezing a bouquet garni of sage, thyme, and rosemary to add to winter roast chickens and potatoes!
  5. Pour extra-virgin olive oil or melted, unsalted butter over the herbs.
  6. Cover lightly with plastic wrap and freeze overnight.
  7. Remove the frozen cubes and store in freezer containers or small bags.
  8. Don't forget to label each container or bag with the type of herb (and oil) inside!

Crab Dip

Living in the Jersey Shore we can always go down the street crabbing for the best Blue Claw crabs ever. My kids, since they were small loved to crab so I had to think of some recipes, when I had these crabs. But this delicious crab dip came from my sister in law, AnnMarie. She has been making this for years and all of us have loved it, especially my daughter Alexa. Although we do love to catch crabs, this recipe uses canned crab. But you can defiantly use fresh caught crab when it is available. It is so easy to make with not many ingredients so you can put this together if needed for unexpected company.

Ingredients:

1 ( 7 ounce) can crabmeat
1 cup light cream
1 cup mayonnaise
1 cup plain stuffing mix
1/2 cup diced onion

Directions:

1. Preheat oven to 350 degrees
2. Combine all ingredients and mix well
3. Pour into a small baking dish and bake for 30 minutes until golden brown.
4. Serve with crackers or fresh veggies. Enjoy!!!!
