Mediterranean Dip


This dip is so delicious with the layers of flavors. It has a creamy, crunch mixed with warm flavors of the cilantro. Perfect for any occasion...


Ingredients:

For The Cilantro Pesto:
1 1/2 cups fresh chopped cilantro
2 garlic cloves, minced
1/3 cup olive oil, divided
2 Tablespoons pecans
2 Tablespoons pine nuts
1/4 cup parmesan cheese

Ingredients For The Dip:

Hummus
Cilantro Pesto ( recipe above)
cucumber, seeded and diced
1 small onion, diced
Banana peppers, chopped
sliced olives, black or kalamata
crumbled feta cheese
sun dried or oven dried tomatoes


Directions:

1. For the cilantro pesto, combine the cilantro, garlic, 2 tablespoons olive oil, pecans and pine nuts, then place in a food processor, keep pulsing until resembles a coarse paste, keep scraping down the bowl. With the processor running add the remaining olive oil in a steady stream until mixture is smooth. Transfer pesto to a small bowl and stir in the parmesan. Se aside. ( If sing for later place a thin layer of olive on top and place a piece of plastic wrap directly on the surface of the pesto and place in a airtight container


Directions For Assembling The Dip:

1. Using a serving platter place a thick layer of hummus, then spread the cilantro pesto over the hummus, then evenly the following, cucumbers, red onion, banana peppers, olives, feta, then top with the oven or sun dried tomatoes. Garnish with a little cilantro and serve with pita chips.
