Chicken Fried Rice





No need for takeout fried rice. This recipe can be used as a side dish or main meal, because it has chicken in it. The recipe so good , and this is quick and easy to make.




Ingredients:


3 cups cooked white rice
1/2 lb boneless, skinless chicken breasts
2 eggs
8 teaspoons soy sauce, divided
1 teaspoon vinegar
1 teaspoon oyster sauce
1/2 teaspoon pepper powder
1/2 small onion finely chopped
4 cloves garlic finely chopped or minced
3/4 cup total of chopped vegetables ( 1/4 cup finely chopped red pepper, 1/4 cup peas 1/4 cup diced carrots, or what ever veggies you like)
2 teaspoons cornstarch


Directions:


  1. Cut chicken into bite size pieces.
  2. Combine 4 teaspoons soy sauce, and vinegar.Pour half of this into the chicken along with pepper powder and corn starch and marinate this for ten minutes.
  3. Pour two teaspoons of oil in a pan and stir fry this chicken till it turns white and is cooked through.
  4. In the same pan stir fry all the vegetables starting with the onion for two minutes, then toss in and red bell pepper and green peas and carrots and cook for one minute longer. Remove from heat and put to the side.
  5. In a hot pan add a little oil and add minced or finely chopped garlic and stir for a few seconds then and add eggs. Cook and scramble the eggs and add in chicken vegetables, remaining 4 teaspoons soy sauce mixture,  oyster sauce and pepper powder. Mix well and add rice. Fry rice for one more minute. Serve hot.
