Macaroni And Cheese Cups With Bacon And Broccoli




















Talk about the perfect mac and cheese cups. These are so amazing and delicious, made with creamy mac and cheese and by adding bacon and broccoli to these cups take them to another level of deliciousness. Great way to get your kids to eat their veggies. And this is a perfect meal for your entire family. Make a salad on the side and within 30 minutes you have a quick and easy meal on your table, when I saw this recipe and made them, I love these. They will be a huge hit with the whole family. Great for dinner, kids parties, appetizers, or anytime you just want a snack.




1 (6 ounce box) Horizon organic macaroni and cheese
1 cup chopped broccoli florets
9 slices of bacon
1/2 Cup  Panko breadcrumbs
Salt and Pepper to taste

Directions:

1. Preheat oven to 425 degrees 
2. Line a muffin tin with 9 greaseproof liners or spray heavily with cooking spray then set aside.
3. In a large stockpot cook macaroni and cheese according to package instructions.
4. Meanwhile, cook, drain and chop bacon.
5. Stir broccoli and bacon into macaroni and cheese mixture. Season with salt and pepper to taste.
6. Divide mixture between 9 prepared liners. Sprinkle with Panko breadcrumbs. If desired, lightly spritz or drizzle tops with olive oil for golden breadcrumbs.
7. Bake for 15-20 minutes or until set and breadcrumbs are golden. Cool for 5 minutes before taking out and serving.
