Apple Pie Cinnamon Oatmeal Cookies









These apple pie oatmeal cookies are another healthy cookie so delicious, they are made with oats, whole wheat flour, cinnamon, coconut oil, agave or honey. The texture of these cookies are soft and tender and taste just like an apple pie, if you have a craving for an apple pie make these healthy cookies and with all the healthy sweeteners these will satisfy your sweet tooth with out all the calories. I am so glad I found another great recipe like this one. They will be gone in a day, maybe make a double batch.

I love baking with oats, coconut oil ( the coconut oil replaces the fats from butter or oil and their are so many health benefits from coconut oil) and apples, even cooking with them, their are so many different varieties that I love, Fuji, Gala, Granny Smith, etc. It doesn't have to be fall to bake with apples, because all year round you can find sweet or tart delicious apples. Yesterday I went to Costco grabbed myself  2 large containers of gala and fuji apples, carrots, more coconut oil, maple syrup, oats, chocolate chips, strawberries, coconut, and I am also making the carrot apple bread again today, we literally eat a loaf a day here, I am going to have to make a double batch of that bread, it is just amazing.









Ingredients: 

1 cup instant oats, measure correctly
  • 3/4 cup whole wheat flour, measure correctly 
  • 1 1/2 teaspoons  baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1/8 or pinch of salt 
  • 2 Tablespoons coconut oil or unsalted butter, melted
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup agave or honey ( you can also use 1/2 cup brown sugar plus 5 Tablespoons milk 
  • 1 cup FINELY diced red apple ( about 1 large or 2 medium) 


Directions:
  1. Whisk together the oats, flour, baking powder, cinnamon, and salt in a medium bowl. In a separate bowl, whisk together the coconut oil or butter, egg, and vanilla. Stir in the agave. Add in the flour mixture, stirring just until incorporated. Fold in the apple. Chill for 30 minutes. CHILLING IS MANDATORY....
  2. Preheat the oven to 325 degrees and line a baking sheet with parchment paper or a baking mat.
  3. Drop the cookie dough into 15 rounded scoops onto the prepared sheet, and flatten slightly. Bake for 13-15 minutes. Cool on the pan for 15 minutes before turning out onto a wire rack.
