Low Fat Buffalo Lettuce Chicken Wraps


These Low Fat Buffalo Chicken Lettuce Wraps, are so good with the crunchy veggies, the spicy chicken all in a lettuce cup, then you can top it off with a fat free blue cheese or ranch salad dressing. Guilt free but yet so delicious!!!


Ingredients:

24 ounce boneless, skinless chicken breast
1 celery stalk
1/2 onion, diced
1 garlic cloves, minced
16 ounce fat free, low sodium chicken broth
1/2 cup Franks hot sauce

For The Wraps:

6 large Bibb or Iceberg lettuce leaves
1 1/2 cups shredded carrots
2 large celery stalks, cut like matchsticks
1/4 cup fat free ranch or blue cheese salad dressing, divided to top each wrap


Directions:

1. In a crockpot combine the chicken, onion, celery, garlic and broth, enough to cover the chicken
then cover and cook on high for 4 hours.
2. Remove the chicken from the crockpot, reserve 1/2 cup of the broth and discard the rest. Shred the chicken with 2 forks and return to crockpot with the reserved broth and 1/2 cup of the hot sauce and cook an additional 30 minutes on high. This makes 3 cups of chicken.
3. To assemble place the lettuce on the plate, place 1/2 cup buffalo chicken in the cups, then 1/4 cup shredded carrots and celery, then your ranch or buffalo dressing and enjoy!!!
