Crusty Parmesan Herb Zucchini Bites



I love zucchini any way I can eat it. I grow it in my garden, and make it in so many ways. This is perfect for a winter meal or for a summer barbeque. It is another favorite of mine that is simple to make with only a few ingredients, plus adding the cheese makes those kids running.



Ingredients:

4 medium-large zucchini sliced in half lengthwise
3/4 cup parmesan cheese
1/2 Tablespoon thyme, minced
1/2 Tablespoon rosemary, minced
Olive oil
Salt and Pepper to taste


Directions:

1. Preheat oven to 350 degrees and brush both sides of the zucchini with olive oil using a pastry brush then place on a foil lined cookie sheet
2. In a bowl combine parmesan cheese, thyme, rosemary, salt and pepper, then sprinkle all over the top of the zucchini coating ever one well.
3. Place in the oven and bake for 15 minutes. Then the last 3-4 minutes place under the broiler until cheese is crisp and browned.
