Apple Fritters

I love apple fritters, so simple to make and so good. Several times a year a go to Lancaster, PA to Amish stores to pick up all my spices and baking goods in bulk. But while I am there I have to get apple fritters, they are the best there. So I had to find and make a recipe that was close to what the Amish make. And these are the best. I am sure you will all love this recipe..

Apple Fritters
1 cup all purpose flour
1 ½ teaspoons baking powder
3 Tablespoons granulated sugar
¼ teaspoon salt
1 egg (beaten)
⅓ cup milk
1 cup apple (diced)
vegetable oil , enough to have 2 inches in your cooking pot
Glaze
¼ cup whole milk
1 teaspoon vanilla extract
2 cups confectioners' sugar
Makes 12 small fritters.

Directions

  1. Measure and sift all dry ingredients together.
  2. Beat eggs and milk together; slowly incorporating the dry ingredients.
  3. Add the diced apples.
  4. In a heavy skillet on the stovetop, heat cooking oil over medium-high heat.
  5. Drop teaspoon full of apple-batter into hot oil and fry until golden brown in color- 3 to 4 minutes on each side.
  6. Remove from oil and drain on brown paper.
  7. To make glaze:
  8. Combine milk and vanilla in a medium saucepan and heat over low heat until warm.
  9. Sift confectioners' sugar into milk mixture.
  10. Whisk slowly, until well combined.
  11. Remove the glaze from the heat and set over a bowl of warm water.
  12. Dip doughnuts into the glaze, 1 at a time, and set on a draining rack placed in a baking  pan for 5 minutes to give the glaze time to set before serving.
