Red Velvet Coconut Cupcakes



Red Velvet Cupcakes are by far my favorite. This recipe is so moist and the frosting, look out because you will want to lick the bowl clean. Its that good. Then to top it with the coconut brings the flavor to a new level. It is a perfect cupcake. These would be a great dessert for Valentines Day. But I make them all of the time, because they are so easy.



Red Velvet Cupcakes:
1 box Red Velvet Cake Mix
3 eggs
1/2 C. oil
3/4 C. sour cream 
1/2 C. milk or buttermilk ( I used milk and they were perfect, if you do not have buttermilk)
2 tsp. vanilla extract
Coconut Cream:
1/2 C. butter, softened
8 oz. cream cheese
1 tsp. vanilla extract
3-4 C. powdered sugar
Shredded coconut, sweetened
Directions
1. Preheat oven to 350 degrees and line pans with cupcake liners.
2. Sift cake mix into a small bowl and set aside.
3. In a large bowl, combine eggs, oil, sour cream, milk and vanilla extract until smooth.
4. Stir in cake mix.
5. Fill cupcake liners 3/4 full and bake for 15-20 minutes or until an inserted toothpick comes out clean and they spring back when touched. 
6. Let cool.
7. Coconut Cream: Beat butter and cream cheese until smooth. Add coconut extract and vanilla extract and beat again. Slowly add in powdered sugar until you reach our desired consistency.
8. Frosting cupcakes, then roll in a bowl of shredded coconut. 
9. Eat and Enjoy!!!!
