Well we go to the fairs and boardwalks and eat anything fried, but did you ever had fried apple rings coated in cinnamon,on and sugar. Well you don't know what you are missing. This is a great way to get the kids to eat their fruit. Well, I can say its healthy right? In my eyes it is. The apples and cinnamon are good for you, ok maybe not the frying, but it is worth it, we need to have something fried once in a while, why not yummy apple rings..
Ingredients:
4 large apples, Granny Smith, Braeburn, or Red Delicious ( these will hold up to frying)
1 cup flour
1/4 teaspoon baking powder
2 Tablespoons sugar
1/4 teaspoon salt
1/8 teaspoon ground cinnamon
1 large egg
1 cup buttermilk
1/2 cup canola oil, for frying
Cinnamon Sugar Coating:
3 Tablespoons sugar
1 teaspoon cinnamon
Directions:
1. In a large bowl for the dry ingredients: combine the flour, baking powder, sugar, cinnamon, and salt, whisk and set aside.
2. In a small bowl for the wet ingredients: combine the buttermilk and the egg, whisk and set aside
3. In a small bowl combine the cinnamon and sugar and set aside.
4. Slice the apples into slices about 1/4 inch thick, keeping skins on. Using biscuit cutters, cut the apple slices into rings, using different size biscuit cutters to make rings
5. Discard the center circle that contains the core. When you are finished making all the apples into rings, place the rings on a paper towel to remove excess water. So the batter will stick.
6. Heat the oil in a sauce pan or cast iron pan, heat oil to 350 degrees.
7. Combine the wet ingredients into the dry ingredients and whisk until smooth and combined.
8. Dip the rings into the batter, tapping the rings against the side of the bowl to remove excess batter then cook the rings in small batches, turning to ensure evenly browning on each side. When the rings are golden brown and crispy, transfer them to a paper towel lined plate for one minute to remove excess oil. Then while they are still hot, dredge them into the cinnamon sugar mixture, flipping to ensure both sides are covered with mixture. Transfer to a wire rack, and eat while warm. You can also dip then in warm caramel if desired, but you do not need to, they are delicious as they are.
