Grilled Cilantro Lime Chicken With Avacado Salsa

















  • This cilantro lime chicken is mouthwatering after being marinated in lime, honey, garlic, and cilantro then grilled to perfection. Then topped off with a creamy delicious avocado salsa, made with onion, creamy avocados, lime, tomatoes, garlic, salt and pepper. 
  • This dish is perfect for any day of the week meal, or great for get togethers , gatherings with friends for parties, so simple to put together, grill top with your avocado salsa and wa la a perfect dinner for everyone. I have making this dish for many years now, then I found this recipe with a few changes I love it, my entire family does. Add some rice to the side and you have a meal to go to all the time. This dish makes a beautiful, colorful presentation.




  • Ingredients:
  • 2 pounds chicken boneless skinless chicken breasts 
  • 1 Tablespoons lime zest
  • 1/3 cup fresh lime juice
  • 1/4 cup olive oil, plus more for brushing grill
  • 1 1/2 tsp honey
  • 1/3 cup chopped cilantro 
  • 3 cloves garlic, minced
  • Salt and black pepper
  • Salsa
  • 2 medium avocados (ripe but still firm), diced into bite sized pieces
  • 2 medium Roma tomatoes, take the seeds out chopped small
  • 1/2 cup chopped, finely red onion
  • 1 clove garlic, minced
  • 1 Tablespoon fresh lime juice
  • salt and pepper to taste
  • 3-4 Tablespoons chopped cilantro
Directions:
  • Place chicken on a cutting board, place between 2 sheets of plastic wrap and pound chicken to an even thickness. Transfer chicken to a large storage bag.
  • In a small mixing bowl whisk together lime zest, lime juice, olive oil, honey, cilantro, 3 cloves minced garlic and season with 1 tsp salt and 1/2 tsp pepper. Pour marinade mixture over chicken in bag. Seal bag while pressing air out, then rub marinade over chicken. Allow to rest in refrigerator 3 hours. 
  • Preheat a grill over medium-high heat about 425 degrees, Brush grill grates with oil then grill chicken until center is no longer pink about 4 minutes per side depending on siize of chicken. Remove and let rest 5 minutes. 
  • In a medium mixing bowl add together avocado, tomato, onion, garlic and lime and season with salt and pepper to taste. Spoon a large amount over chicken and sprinkle with chopped cilantro. Serve warm.
