And then topped with even more of the amazing streusel, it gets even better when you drizzle a maple glaze all over the top. After I came across this and made this for the first time I took a bite and was like omg, I can eat this everyday. You can double this recipe just double all ingredients and use a 13x9 inch baking dish, and that is exactly what I do. You can also use almonds or walnuts if you do not like pecans.
- Cake Ingredients:
- 1/2 cup butter, softened
- 3/4 cup sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 cup sour cream
- 1 1/4 cups flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1teaspoon salt
- 1/4 teaspoon cinnamon
- For Streusel Topping
- 1/4 cup brown sugar
- 1/2 cup flour
- 1 1/2 teaspoons cinnamon
- 1/4 teaspoon salt
- 3 tablespoons butter - chilled
- 1/2 cup chopped pecans
- Maple Icing:
- 1/2 cup powdered sugar
- 2 tablespoons maple syrup
- 2 tablespoon milk
Directions:
- Preheat oven to 350 degrees
- Spray loaf pan with non sticck cooking spray
- In a large mixing bowl cream together butter and sugar until fluffy about 3 minutes, add eggs, one at a time. Add vanilla and sour cream. Mix until well combined.
- In a separate medium sized bowl combine flour, baking powder, baking soda, salt and cinnamon
- Add the flour mixture to the butter/sugar mixture and mix until combined.
- For Streusel topping
- In medium bowl, combine all ingredients. Mix with pastry cutter or 2 forks until well combined and butter is the size of small crumbly.
- Pour half the cake batter into the prepared loaf pan and top with half the streusel mixture. Add remaining batter and top with streusel mixture, use all of it..
- Bake for about 35-40 minutes or until a toothpick comes out clean. Completely cool on counter
- Icing
- In a medium bowl whisk all of the ingredients together and drizzle over cooled cake.
