Ingredients:
- ¼ cup butter, softened
- 1 cup sugar
- 3 bananas, mashed
- 2 eggs
- ⅓ cup milk or plain yogurt
- 1 tsp vanilla
- 1 cup all-purpose flour
- 1 cup whole wheat flour or you can use all purpose flour
- ¾ tsp baking soda
- ¼ tsp salt
- ½ tsp cinnamon
- Streusel Topping Ingredients:
- ¼ cup smooth peanut butter
- ¼ cup brown sugar
- ½ cup all purpose or whole wheat flour
- 1 tbsp oil
- ¼ cup chocolate chips
Directions:
- Preheat oven to 350 degrees F. Grease an 8x5" loaf pan.
- In a large mixing bowl or stand mixer , beat butter and sugar until creamy, about 2-3 minutes. Stir in bananas, eggs, milk and vanilla until combined.
- Add flours, baking soda, salt and cinnamon and stir until just combined. Spread into loaf pan and set aside.
- For The Streusel Topping: In a medium bowl, combine peanut butter, sugar, and flour. Add just enough oil to make it crumbly like a streusel (I use my hands, or pastry cutter) Stir in chocolate chips.
- Sprinkle evenly on top of batter in loaf pan and press down gently.
- Bake for 45 minutes to 1 hour, or until a toothpick comes out clean.
