Banana Crumble With Oat Topping








This amazing Banana Crumble is amazing. Starting with banana's coated in a buttery, cinnamon, touch of orange juice, and brown sugar glaze, cooked to perfection. Then topped with a crumbly oat mixture with brown sugar and a hint of cinnamon, perfect blend of warm flavors, top it off with ice cream on the side and this is perfection..


 We usually just don’t think about bananas when we think about fruit desserts like, crisps or crumbles, we use apples, berries, etc. but here it is, banana's  it came out beautifully.  I can tell you first hand after making this Banana Crumble that they can and did. It was amazing, and I was jumping for joy when I saw this recipe. When you make a Banana Crumble, you want the banana to be ripe a nice bright yellow without any green on it or any signs of starting to over ripen, when baking anything with banana's usually you want overripe brown banana's but not in this case, you want the perfect ripe banana.
Ingredients For The Topping:

  1. 1/4 cup light or dark brown sugar
  2. 1/4 cup old fashioned oats
  3. 1/4 cup flour
  4. 4 Tablespoons cold butter, cut into cube
  5. 1/4 teaspoon cinnamon 
  6. 3/4 cup pecans,  toasted in the oven for several minutes, do not let burn, then chopped 

Ingredients For The Filling:

  1. 2 Tablespoons butter
  2. 1/2 cup light or brown sugar
  3. 1/4 cup orange juice
  4. 1 teaspoon cinnamon
  5. 1/8 teaspoon salt
  6. 6 medium size bananas, cut into chunks about an inch long (not thin slices)
  7. Vanilla Ice Cream or Whipped Topping for topping or on the side 
Directions For The Topping:
  1. Combine all the topping ingredients ( except pecans) in a large bowl and work the mixture together with your fingers until they become crumbly. Add the toasted pecans to the bowl then  stir to mix. Refrigerate the topping while you make the filling.
Directions For The Filling:
  1. 1. In a ten inch cast iron skillet or oven safe skillet, melt 2 tablespoons of butter over low heat. Add the brown sugar and whisk and stirring until it dissolves about 3 minutes. It will become a wet looking creamy mixture that slides around the pan. Stir in the cinnamon and salt. Add the orange juice, slowly and it will sizzle up a little bit. Cook about one minute until it thickens slightly.
  2. Add the banana chunks and toss gently until they are coated. Spread the bananas and sauce out evenly in the pan. Remove the skillet from the stove,sprinkle the topping evenly over the bananas. Put the skillet in a 350 degree preheated oven and bake until topping is golden brown about 20-25 minutes. Let cool in the pan about 10 minutes before topping with vanilla ice cream Or Whipped cream.
