Stuffed Pepper Soup
This stuffed pepper soup is a quick and easy meal. Great for a weeknight dinner that the entire family will enjoy!!!!
Ingredients:
1 pound ground chicken, or you can use ground beef
1 Tablespoon olive oil
1/2 cup green pepper, chopped
1/2 cup red pepper, chopped
1 medium yellow onion, diced
3 garlic cloves, minced
2 ( 14.5 ounce) cans diced tomatoes, or fire roasted diced tomatoes
1 ( 15 ounce) can tomato sauce
2 cups chicken broth
1 teaspoon italian seasoning
Salt and pepper to taste
1 cup white or brown rice
1/4 cup fresh parsley, chopped
Directions:
1. Using a large stockpot heat olive oil on medium-high heat, then add your chicken or ground beef and cook until no longer pink. Drain fat, place meat back in pan, add the peppers, onions, garlic cloves, and cook for 5 minutes
2. Add the cans of diced tomatoes, tomato sauce, chicken broth, italian seasoning, salt and pepper, bring to a boil, reduce heat to low, cover, and let cook for 30 minutes.
3. Just before serving stir in the cooked rice. Ladle into bowls and sprinkle with parsley..Enjoy!!!
