These are so good, Healthy way of having pizza but without the guilt of the bread. These are great for a main or side dish for dinner. Or cut them into bite size pieces for appetizers for a party.
Ingredients:
4 zucchini
2 Tablespoons olive oil
8 ounces ground turkey or beef
1/2 teaspoon oregano
1/2 teaspoon basil
1/2 teaspoon garlic powder
salt and pepper to taste
1 1/2 cups marinara sauce, plus another 1 1/2 cups more for dipping
1 cup mozzarella cheese
Directions:
1. Preheat oven to 375 degrees and line a cookie sheet with parchment paper
2. Wash, then cut the zucchini horizontally then carefully scoop out the center of the zucchini leaving about 1/2 inch on the skin.
3. Heat oil in a saucepan on medium-high heat, add the meat, oregano, basil, garlic powder, salt and pepper and cook about 5 minutes until meat is no longer pink, drain the fat and add marinara sauce and cook until heated through about 2-3 minutes
4. Stuff the meat mixture into the zucchini and sprinkle with the cheese. Place into the oven and cook for 10-15 minutes until the zucchini is tender and the cheese is melted and browned. Enjoy!!!!
