These creamy, cheesy grits are so good, topped with a fresh tomato slaw adds the perfect amount of freshness to this dish..and I love to cook with grits, and this is a great southern recipe..Enjoy!!!!
Ingredients:
- 1 cup yellow corn grits
- 2 Eggs
- 1/2 Cup Shredded Cheddar Cheese
- 4 Bacon Slices
- 2 Vine Ripened Tomatos
- Salt
- Cilantro
Directions:
- Cook the bacon as stated on the package
- After bacon is done cooking boil 3 cups of water and add the grits stirring them in.
- As the grits are cooking cut the tomatos and using mostly the tomato skin, cook it on medium heat until it softens.
- Keep stirring the grits, add salt to taste, and cook them for 3-7 minutes until they thicken.
- Lightly butter a pan and on medium heat crack open each egg. Cook egg for 1-2 minutes, salt to taste, then flip it over to cook the other side for 1-2 minutes.
- Place grits in 2 bowls and sprinkle cheese on top.
- Place 1 fried egg on top of the cheese in each both, place tomato slaw on top of the egg.
- Break the bacon into pieces and sprinkle on top of the tomato.
- Top with cilantro.
