This is a perfect salad for dinner if you are looking to get protein from chicken and the beans, crunch from the tortilla chips, and cheese. Then the BBQ and the ranch dressing go perfect in this salad. Loads of great ingredients in this salad!!
Ingredients:
1 Tablespoon olive oil
2 boneless, skinless chicken breasts, thinly sliced
salt and pepper to taste
6 cups chopped romaine lettuce
2 roma tomatoes, diced
3/4 cup canned corn kernels, drained
3/4 cup canned black beans, drained and rinsed
1/4 cup diced red onion
1/4 cup Monterey Jack cheese, shredded
1/2 cup cheddar cheese, shredded
1/4 cup ranch dressing
1/4 cup BBQ sauce
1/4 cup tortilla strips
Directions:
1. Heat olive oil in a saucepan on medium heat, season chicken with salt and pepper and add to skillet only flipping once, about 3-4 minutes on each side. Cool, then slice thinly.
2. To assemble the salad, in a large bowl place the romaine lettuce. Top with tomato, corn, beans, onion, and both cheeses. Drizzle ranch dressing then the bbq sauce on salad and top with the tortilla strips.
