Avocado Toast with cheese and tomatoes is the perfect snack, lunch or dinner. So healthy and satisfying.
Ingredients:
8 slices hearty whole grain bread
2 cups cottage cheese, Or you can spread goat cheese if desired
1 large avocado, sliced and drizzle some lime juice over if desired so it doesn't brown
1 Large ripe tomato, sliced
salt and pepper
Directions:
1. If desired you can toast your bread lightly, or you do not need to
2. Lay slices out on cutting board
3. Top each slice with 1/4 cup cottage cheese, sprinkle with dash of salt and pepper
4. Top with avocado slices, then tomato slices, sprinkle with a little more salt and pepper, and Enjoy!!!
